If you are leery about trying a kale salad, let me tell you that the right dressing makes all the difference. I have the perfect, dairy-free dressing for you to try. It may even turn you into one of those kale diehards. (Welcome to the club.)

Ingredients
  1. ¼ cup lemon juice
  2. ¾ cup water
  3. 2/3 cup raw cashews
  4. 2 cloves garlic
  5. 3 medjool dates or 3 tbsp maple syrup
  6. 2 pinches pink salt
  7. 2 tbsp balsamic vinegar
  8. 1-2 inch fresh ginger (or you can use powder)
Instructions
  1. Puree all ingredients in a blender or food processor
  2. Store in a glass jar

Ingredients
  1. 1 head kale, de-stemmed and leaves torn into bite-sized pieces
  2. currants
  3. Sunflower seeds, raw and unsalted
  4. Pumpkin seeds, raw and unsalted
  5. Hemp hearts
  6. Kale Salad Dressing (recipe above)
  7. Cucumber, diced
  8. Carrot, grated
  9. Tomato, diced
Instructions
  1. Toss all ingredients together
  2. Use as much or as little of each ingredient as you fancy
Notes
  1. It's much easier if you have a nice, big bowl to toss the ingredients and evenly coat with dressing
  2. Kale doesn't wilt very easily so toss a big batch and enjoy for the next couple of days
