You are either thinking “black beans and brownies don’t mix” or “I’ve heard of these black bean brownies but haven’t gotten around to baking them yet.” To which I say yes they do and get on this recipe ASAP so that I can prove they are worth it. I promise you will have no idea that there are black beans in these babies. Well, other than the fact that you put them in of course.

Not only are these free of the refined flour, sugar and oil typically present in traditional brownies, they are nutrient powerhouses thanks to the protein and fiber-rich beans. You can enjoy as many as you want but you probably won’t be eating more than two or three because they are so rich in nutrients. Black bean brownies are not new in the health world but with this delicious icing, these black bean brownies truly are the best.

Ingredients
  1. BROWNIE BATTER
  2. 2 cups black beans or 1 can Eden Organics black beans (drained)
  3. 10 medjool dates
  4. 3 heaping tbsp cashew butter
  5. 1 tsp vanilla
  6. 1/2 cup cocoa
  7. 1 tbsp ground chia
  8. 1/3 cup coconut butter
  9. pinch of pink salt
  10. pinch of cinnamon
  11. FROSTING RECIPE
  12. 1 avocado
  13. 1/2 cup water
  14. 6 medjool dates
  15. 5 tbsp cocoa powder
  16. 1 tbsp coconut butter
  17. handful of dark chocolate chips
  18. splash vanilla
  19. pinch cinnamon
Instructions
  1. Preheat oven to 200F
  2. Mix all batter ingredients in a food processor
  3. Spread in parchment lined square pan
  4. Bake for 90 minutes
  5. Cool before adding the frosting
  6. For frosting: melt coconut oil and dark chocolate chips together
  7. Purée this melted mixture and remaining frosting ingredient together
  8. Frost those brownies!!
