As the end of August draws near, so does the feeling of the end of summer. But I’m here to remind you (and myself!) that summer actually goes until September 21. To help drag out summer, I am sharing a super summer-y treat today – popsicles. We always hear about “beating the heat” in summer and while popsicles are the perfect remedy for that, I want to be clear that I love the heat. I actually get very irritated with the numerous complaints about the heat during summer. I mean as Canadians – don’t we get enough cold weather that we can avoid complaining about glorious summer days?! Granted I do have air conditioning that I can escape to but still… you will never hear me complaining about the heat. I’m a summer baby through and through.
While some popsicles are touting their newfound absence of artificial flavours (consumer demand works but it’s slow), many products still contain them in addition to artificial colours, artificial sweeteners in “sugar free” products, high-fructose corn syrup (glucose-fructose), additives and gums. These ingredients create inflammation in the digestion system, which initiates pain in the form you are most prone to – bloating, low energy, acne and headaches for example.
If you have a sensitivity to corn, you will likely find it impossible to lay your hands on popsicles without maltodextrin or acids such as ascorbic, citric or malic. If you want creamy popsicles, but have a sensitivity to dairy, you are out of luck too. If you find refined sugar triggers headaches, treats such as popsicles are delicious pain inducers.
When you have food sensitivities (here’s how to know if you have them) or you simply want to eat healthier, it can feel like there are no food options – like you are forced into a corner of salads and chicken breasts. I truly believe eating healthy should not feel like a punishment. It can sometimes, depending on your choices, but it does not have to feel this way.
When it comes to treats – they are not off the table! Sure, changes need to be made but there are tons of delicious options. And today’s Creamy Strawberry Raspberry Popsicles are one of them. I am sharing this recipe straight out of the summer meal plan of my 21-Day Headache Relief Detox. Yup, a detox with snacks that taste like treats. That’s the kind of way that I like to live.

- 1 cup strawberries
- ½ cup raspberries
- ½ cup coconut milk (from can)
- ½ tsp pure vanilla extract
- 2 medjool dates
- Place all the ingredients in the blender
- Puree until smooth
- Pour into your popsicle moulds
- Place in the freezer until frozen (4-6 hours or overnight)
- Choose organic berries, especially for strawberries.
- Feel free to play with other fruit combinations.
- Popsicle moulds are popping up everywhere, even in dollar stores, so they should be easy to find and fairly inexpensive.
